Doro Wat – Authentic Ethiopian Chicken Stew in Winnipeg

(94 reviews)

Merkato Restaurant's Doro Wat is Winnipeg's finest authentic Ethiopian chicken stew — legs of free-range chicken slow-cooked in a dense, aromatic sauce of onions, berbere, kibbeh (Ethiopian ghee), and herbs, finished with a whole boiled egg. A classic comfort dish and our Chef's top recommendation.

About Merkato's Doro Wat

Doro Wat is Ethiopia's most celebrated national dish, and at Merkato Restaurant we prepare it the traditional way it has been made for centuries. Free-range chicken legs are slow-cooked for hours in a richly spiced sauce built on slow-caramelized onions, berbere spice blend, and kibbeh (clarified Ethiopian butter). A whole boiled egg is nestled into the stew to absorb all those deep, complex flavours — a tradition central to Ethiopian celebrations and everyday dining alike.

Served atop a generous bed of fresh injera flatbread, Merkato's Doro Wat delivers an intensely flavourful, warming experience that has kept Winnipeg diners returning for over 20 years. Whether you're discovering Ethiopian food for the first time or a longtime fan of authentic wot, this is the dish to start with.

"Merkato is my favourite restaurant in Winnipeg. Everything, from the decor and music, to the food, to the proprietress, perfectly emulates the style of a typical Ethiopian cafe. Never crowded, you won't be rushed as you select from an incredible variety of dishes. Serving sizes are large despite the inexpensive prices."

"We were served by the friendly owner of the restaurant, and he suggested the mixed platter, which had seven different dishes (three meat and four vegetable based). Eating Ethiopian style — no utensils, just hands aided by the spongy flatbread — was a fun and unique experience. The total bill was only $50 Cdn all in, so it certainly was good value."
